Our journey began in the hills of Western Maryland and took shape in the bustling kitchens of Charleston, New Orleans, and D.C. Along the way, Chef Jacob honed his craft at acclaimed restaurants like Brennan’s and Doris Metropolitan, blending the structure of French technique with the heart of Southern tradition. Rêve was born from a belief that Birmingham deserved something bold — a dining experience both refined and rooted. What started as a pop-up with a dream soon found its home near the historic Pizitz building, growing into a restaurant that celebrates local ingredients, forgotten classics, and thoughtful hospitality. From ten-course tasting menus to our a la carte favorites, every dish reflects our deep respect for Alabama’s bounty: aged beef, fresh Gulf seafood, foraged herbs, and heirloom produce are treated with the same reverence as any fine French ingredient.
